Goat’s Cheese, Parma Ham & Spinach Gnocchi

It’s great to make your own gnocchi, it’s pretty savvy too, using simple, minimal ingredients. The only problem is, it’s a bit time consuming and fiddly. I debated whether or not to put a simple recipe for gnocchi on here and pretend that I make my own……honesty prevailed and actually, I don’t think using ready made gnocchi is any different to using dried pasta…….

So, if like me, you just don’t have time to make your own gnocchi during the week, don’t beat yourself up. Most of us don’t. You can still put together this tasty (mostly homemade!) recipe in less than half the time.

Don’t be alarmed by the small amount that this makes. It’s really filling and rich and should be served with a big side of salad!

Feeds 4

  • 500g pack of gnocchi
  • 100g of soft goats cheese
  • 100g spinach
  • 3 shallots
  • 150ml of milk
  • 6 slices of parma ham (rind removed)
  • drizzle of olive oil
  • Some generous grinds of black pepper to taste.
  • Small handful of rocket leaves (optional)
  1. Place the gnocchi in a large saucepan and cover in boiling water. Bring to the boil and simmer for 3 minutes. Drain and set aside.
  2. Finely slice the shallots into slithers and place in a non-stick frying pan with a drizzle of olive oil.
  3. Fry for 5 minutes on a low heat , stirring occasionally until they are soft.
  4. Add the drained gnocchi to the pan and fry for a further 2 minutes, moving them occasionally around the pan, so they start to crisp up all over.
  5. Add the milk, parma ham, goat’s cheese, spinach and black pepper. Stir and simmer until the goat’s cheese has melted, the sauce has thickened, the spinach has wilted and the ham is heated through.
  6. Finish with a few rocket leaves if you have them.

Tip: This sauce works really well with pasta too if you prefer.
